Mug Life.


Hi y’all.  I weighed this weekend and I’m coming down a few ounces at a time.  I will take it.  I so badly want to take charge of my body and whip it into shape but it’s such a slow process.  All I want is to get back for the immediate future is to get back to my lowest weight but I’m moving at a snail’s pace.  I have a little while before football season starts so I’d like to reach that goal before then but it won’t be easy.  I’ve done a really good job the past couple weeks so I just need to be patient and keep it up. 



So, the Hungry Girl is by far my favorite healthy cook.  I bought a massive cook book of hers and I just love flipping through it and making her recipes.  She is the best at making simple recipes that echo familiar comfort foods.

She has a whole section on “egg mugs” and “egg bakes.”  She loves cooking with Egg Beaters.  I know that people hate them and if you have only had them microwaved with no flavor, I understand.  I urge you to give them another shot.  They are pretty versatile.  Essentially the Egg Beater, while a little strange, is a blank canvas that you can add any flavor to.  I went kept it pretty traditional and just added cheese and bacon.  All you do is mix it together and heat it up.  I had a piece of toast with it and it was quite tasty.  You can add salsa or veggies.  She even has a Buffalo Chicken Egg Mug.  It’s worth a try.



I trust everyone had a wonderful fourth.  I had fun with friends and family and SPARKLERS! It’s crazy how much joy a simple firework can bring but I love those things.







My Dad and I went to see My Morning Jacket, Wilco and Bob Dylan last week at the Tuscaloosa Amp.  My Morning Jacket was really good and Wilco wasn’t bad either.  Bob Dylan was another story.  I realize that the man is a legend and he knew the Beatles and all but he wasn’t great.  He had all these rules about the stage, ticketing and lighting.  You could barely see him.  I know he’s never been a great singer but it was on another level and he didn’t sing a song anyone recognized for 20-30 minutes.  I am glad I can say I saw him but that’s pretty much the only redeeming factor of his performance.  Dad and I had fun, though.

My parents are in Alaska on vacation this week so I’ve been holding down the fort with my brother.  I hope they are having a great time.

  1. One good thing about growing up in a house where one of your parents is pretty much perpetually on a diet is that you get used to most diet food. Egg Beaters were the only eggs I ate at home for most of my life! lol I need to cook some with them and make some of those recipes. I love eggs in general.
